Instructions
- Wash the elderflowers in cold water to remove impurities and insects.
- Put the cleaned flowers in a saucepan and add the cut lemon zest and water.
- Put the pan on the heat and wait for the water to boil, leave it on the heat for another 10 minutes
- Once cooled, remove the zest from the lemon and leave the infusion in the refrigerator for at least 24 hours
- Once this interval has elapsed, separate the elderflowers from the liquid using cheesecloth.
- Bring the liquid and the sugar to a boil. Leave the elderberry syrup on the heat until it begins to set. You can optionally add lemon juice to taste during this process.
- When the elderberry syrup is ready, pour into sterilized bottles and store them in a cool place away from light.
