Ingredients for 2 parts
- 2 tomatoes
- 1 c. à c. sea salt
- 200 g. chicken breasts
- 400 ml. water
- 2 c. à s. olive oil
- 0.5 c. à c. black pepper
- 1 bell pepper
- 1 cucumber
- 1 c. à s. lime juice
- 1 avocado
- 1 c. à s. coriander leaf
- 200 g. quinoa
Steps
- Rinse the quinoa under cold water. In a saucepan, bring the water to a boil, add the quinoa, and simmer for 15 minutes. Drain if necessary.
- Meanwhile, dice the bell pepper, cucumber, and tomato. Peel and slice the avocado.
- In a pan, heat the olive oil and cook the chicken breast for 8-10 minutes, until fully cooked. Season with salt and pepper.
- In a bowl, mix the lemon juice, a drizzle of olive oil, salt, and pepper to prepare the dressing.
- In a large bowl or plate, arrange the cooked quinoa, vegetables, chicken, and avocado. Drizzle with the dressing and sprinkle with fresh coriander.
- Serve immediately.
