Ingredients for 2 parts
- 2 eggs
- 2 c. à s. sugar
- 1 onion
- 2 garlics
- 0.5 c. à c. chili powder
- 2 c. à s. sunflower oil
- 2 c. à s. jus de citrons verts
- 50 g. peanuts
- 100 g. mungo beans
- 2 c. à s. soya sauce
- 1 c. à s. chives
- 200 g. shrimps
- 200 g. rice vermicelli
- 150 g. tofu
Steps
- Soak the rice noodles in hot water for 10 minutes, then drain.
- In a bowl, mix the fish sauce, soy sauce, palm sugar, and lime juice to prepare the sauce.
- Heat the oil in a pan. Sauté the garlic and chopped onion for 2 minutes.
- Add the shrimp and diced tofu. Cook for 5 minutes.
- Push the ingredients to the side of the pan and crack the eggs in the center. Scramble lightly, then mix with the rest.
- Add the drained noodles and sauce. Mix well and stir-fry for 3-4 minutes.
- Add the bean sprouts and chives. Cook for another 1 minute.
- Serve hot, topped with crushed peanuts, lime wedges, and chili powder.
