This recipe, although simple, requires bain-marie cooking to achieve a smooth and creamy texture. Rennes flan is ideal for lovers of classic and comforting desserts.

Ingredients for 8 parts
- 7 eggs
- 150 g. sugar
- 1 L. semi-skimmed milk
- 0.5 vanilla bean
- 1 caramel
Steps
- Beat the sugar and eggs for a long time.
- Add the warm milk to the eggs. Flavor with vanilla by adding the scraped ½ vanilla bean.
- Strain through a fine sieve and pour into a caramelized mold.
- Preheat the oven to 160°C (th. 6). Place the mold on a baking sheet and add hot water around it.
- Bake in a water bath in the oven for 30 minutes (extend cooking time if necessary).
- Let cool for 2 hours before unmolding.
