Instructions

  1. Boil a little water in a medium saucepan.
  2. Separate the egg whites from the yolks.
  3. Place the egg yolks and sugar in a bowl.
  4. Whisk the egg yolks and sugar until the mixture whitens.
  5. Add the Marsala or Port.
  6. Place the bowl over simmering water (bain-marie), making sure that the bowl does not touch the water.
  7. Cook over very low heat, whisking constantly with a whisk.
  8. Whisk for about 10 minutes, until you obtain a thick, creamy cream that retains the whisk marks.
