Ingredients for 4 parts
- 100 g. butter
- 0.25 c. à c. sea salt
- 2 shallots
- 100 ml. vin blanc
- 0.25 c. à c. white pepper
- 2 c. à s. chervil
- 2 c. à s. tarragon
- 150 ml. meat glaze
Steps
- Finely slice the shallots.
- In a saucepan, reduce the white wine with the sliced shallots, salt, and white pepper until only a tablespoon of liquid remains.
- Add the meat glaze and simmer for 10 minutes.
- Remove the saucepan from the heat and incorporate the cold butter cut into pieces, whisking constantly until the sauce is smooth and creamy.
- Add the chopped tarragon and chervil. Mix gently.
- Serve immediately.
