Ingredients for 6 parts
- 50 g. sugar
- 400 ml. cream
- 150 g. dark chocolate 70%
- 3 egg yolks
- 30 g. gelatin
- 150 g. white chocolate
Steps
- Soak the gelatin sheets in cold water for 10 minutes.
- In two separate saucepans, melt the white chocolate and the dark chocolate with 100 ml of liquid cream in each saucepan, over low heat.
- In a bowl, whisk the egg yolks with the sugar until the mixture turns pale.
- Divide the egg yolk mixture in half. Add half to the melted white chocolate and the other half to the melted dark chocolate. Mix gently.
- Squeeze out the gelatin and divide it in half. Add half to the white chocolate mixture and the other half to the dark chocolate mixture. Mix until it is dissolved.
- In another bowl, whip the remaining liquid cream into whipped cream.
- Divide the whipped cream in half. Gently fold half into the white chocolate mixture and the other half into the dark chocolate mixture.
- In individual containers, alternate layers of white chocolate mousse and dark chocolate mousse to create a marbled effect.
- Let it rest in the refrigerator for at least 3 hours.
