Ingredients for 4 parts
- 0.5 c. à c. sugar
- 0.5 c. à c. sea salt
- 450 g. chicken breasts
- 1 c. à c. black pepper
- 2 carotts
- 1 lime
- 0.5 cucumber
- 0.5 c. à c. hot sauce
- 1 baguette
- 2 c. à s. soya sauce
- 4 c. à s. mayonnaise
- 0.5 c. à s. coriander leaf
- 2 c. à s. sushi rice
- 60 ml. rice vinegar
- 1 c. à c. ginger
Steps
- Cut the chicken breasts into strips. In a bowl, mix the chicken with soy sauce, sesame oil, ginger, and pepper. Cover with plastic wrap and let it rest in the fridge for at least one hour.
- In a second bowl, mix the carrots, salt, sugar, and vinegar. Cover and let it rest in the fridge for at least one hour.
- In a third bowl, mix the mayonnaise, pepper, spicy sauce, and lime juice. Cover and let it rest in the fridge for at least one hour.
- Grill the chicken over low heat in a pan for 2-3 minutes on each side, then let it rest.
- Spread mayonnaise on both halves of the bread. Cover the other half with cucumber, marinated carrots, and sprinkle with coriander.
- Place the chicken pieces on the vegetables and herbs. Close the sandwich with the other half of the baguette, cut into four and serve.
