Instructions

  1. Peel and cut the eggplants into pieces and set aside.
  2. Peel the garlic cloves then the shallot and mix them.
  3. Add the olive oil, cumin, curry, paprika.
  4. Cook over high heat for 6 min.
  5. At the end of cooking, add the eggplants and lemon juice.
  6. Salt and pepper. Cook over low heat for 35 min.
