Homemade vanilla flan

A simple recipe for a must-have in French cuisine.

Ingredients for 8 parts


  • In the saucepan, boil the milk with the vanilla pod split lengthwise.
  • In the bowl, mix the sifted cornstarch with the sugar then add the beaten eggs and mix.
  • Add the boiling milk without the pod.
  • Cook the mixture over low heat, stirring constantly, for 1 min 30 minutes.
  • Preheat the oven to 200°C and butter the dish to put in the oven.
  • Pour the mixture into it and level the surface.
  • Cook for 25 to 35 minutes, until the surface lightly browns.
