Ingredients for 4 parts
- 3 eggs
- 90 g. butter
- 1 c. à c. sea salt
- 1 L. whole milk
- 1 Kg. potatoes
- 1 c. à c. grounded nutmeg
Steps
- Cook the potatoes: Boil them until they are very tender.
- Mash: Reduce them to a puree with the butter.
- Add the milk: Gradually incorporate the hot milk to obtain a light texture.
- Incorporate the eggs: Separate the whites from the yolks. Add the yolks to the puree and mix well.
- Whip the egg whites: Add a pinch of salt and gently fold into the mixture.
- Season: Add salt and nutmeg to taste.
- Baking: Pour into a buttered mold and bake at 180°C for about 30 minutes, until the soufflé is golden and puffed.
